ben and i have been trying to eat more fiber and this mexican kale salad has been one of our favs!!! 🌽 salad: - 1 bag kale, chopped (massage with olive oil lime) - 1 can corn, drained & dried - ½ cup cotija cheese - ¼ cup red onion, chopped - 1–2 avocados, diced - crushed tortilla chips (these @MASA Chips are BOMB) dressing: - ½ cup plain Greek yogurt - ¼ cup fresh lime juice - ¼ cup cilantro, chopped - 2 garlic cloves - ¼ tsp salt - ¼ tsp chipotle powder DO NOT FORGET TO MASSAGE THE KALE! #h
