Rose hip salsa! I was on a mission to make fish tacos, so I went fishing and foraged some goodies along the way. I happened upon a great patch of wild roses and was inspired to make this rose hip salsa! This is one of those random ideas that worked great! The rose hip flavor really complimented the other flavors, adding some sweetness and a little texture. I didn't follow a recipe or write mine down, just added what felt right and adjusted as I went.
